Pineapple Vinegar

Ingredients:

Peel and core of one pineapple
1/4 cup honey
3 + cups water

Instructions:

Scrub pineapple with a vegetable brush and rinse.  Twist leaf bundle to remove the leaves (plant as a lovely house plant!)  Peel and core the pineapple, reserving the flesh for other uses. Chopped peel and core into one inch chunks.  

In a clean 2 quart container (glass, plastic, crock) add pineapple peel, core, honey and enough water to cover, around 3 cups or so.  Stir to dissolve honey.  

Cover container with cheesecloth and place is a cool dark location for 2-3 weeks, stirring daily. Mixture should start to bubble within a few days.  If mold starts to form on the surface, just skim it off and discard.

Once bubbling totally stops, strain liquid through a mesh strainer to remove large solids.  Then strain again through a paper towel or fine cheese cloth to reduce cloudiness.  Bottle vinegar in sterilized jars.  Vinegar will clear the longer it settles.  Enjoy!
