(Repost from a few years go. Fall seems right around the corner, so it feels fitting.) Tomatoes, corn, potatoes, sweet onions and smoked bacon create a delicious seasonal soup. Fall arrived last night with strong winds and a big cold front. Frost is in the forecast for this evening in Minnesota. Luckily, I’ve harvested and canned most of my tomatoes, so if the Minneapolis heat island doesn’t hold, I’m we’ll stocked for the winter. In honor of the harvest, here is a lovely recipe for an end of summer/start of fall soup.
